t's like, why haven’t we been doing this all along? It's all about making the most out of what we've got, and honestly, it’s kind of fun. Plus, it’s a little step towards being more eco-friendly, too. This whole idea? It's more than just about salad dressing. It’s about looking at what we have a little differently, getting creative, and maybe a bit more sustainable along the way.

Mix and Match Salad Dressing

*Ingredients:

⁠Remaining honey in your jar (about 2 tablespoons, but no need to be exact—let’s use up what you have!)

  • ⁠1 tablespoon Dijon mustard for a smooth, tangy base

  • ⁠3 tablespoons balsamic vinegar for a rich and slightly sweet acidity

  • 2 tablespoons lemon juice for freshness

  • ⁠A good pinch of salt, to bring all the flavors together

  • ⁠6 tablespoons olive oil for a silky finish

Instructions:

1. With the leftover honey in your jar, there’s no need to scrape every bit out—what’s left is your base.

2. Directly into the honey jar, add the Dijon mustard, balsamic vinegar, and lemon juice. If your jar is on the smaller side, you can adjust the quantities slightly to fit.

3. Sprinkle in your salt. If you’re unsure about how much to add, start with less—you can always give it a taste and add more later.

4. Gently pour the olive oil on top. The idea is to layer the ingredients since we’re going to shake them all together.

5.⁠ ⁠Now, tightly screw the lid back onto the jar. Make sure it’s secure—we don’t want any dressing escaping!

6.⁠ ⁠Give the jar a good, vigorous shake. You’ll see the ingredients start to combine and emulsify into a beautifully blended dressing. Shake for a good 30 seconds, or until fully combined.

7.⁠ ⁠Taste your creation! Unscrew the lid and dip a leaf of lettuce or a spoon to test the flavor. Adjust any seasoning if necessary.


*Customization Options:*

•⁠ ⁠For a cheesy twist, add in some finely grated Parmesan cheese. If you decide to add cheese, give the jar another shake to mix well.

•⁠ ⁠Love a bit of bite in your dressing? Finely mince some shallot and add it to the jar before shaking. The shallot will infuse the dressing with a delicate sharpness.
