Ingredients:
Fresh ripe tomatoes (cherry, plum, or any small-sized are best)
Olive oil
Salt
Optional: Herbs like basil, thyme, or oregano; garlic powder
Instructions:
Preheat your oven to 250°F (or the lowest it can go).
Slice your tomatoes in half and place them cut-side up on a baking tray lined with parchment paper.
Drizzle with olive oil and sprinkle a pinch of salt over them. Add herbs or garlic powder if using.
Pop them in the oven and let them slowly roast for about 2-3 hours, depending on their size. You want them nearly dried but still slightly plump. Keep your eye on them after the2-hour mark to avoid over-drying.
Once done, let them cool and store in an airtight container. Cover them with olive oil, or keep them plain in the fridge for up to a week.
